Smirnoff returns to Splendour in the Grass this July taking festival-goers to sunny Palm Springs via its immersive experience Smirnoff Seltzer Springs. 

Located close to the main stage, Smirnoff’s sensational two-storey mega-marquee is the ultimate haven in the heart of the festival grounds and was the place to be seen last year. On the ground floor, visitors to Smirnoff Seltzer Springs will step into a breathtaking dreamscape with a mesmerizing spectacle of cascading waterfalls projected onto giant LED screens, accompanied by a vibrant collection of beach umbrellas to catch a break from the sun’s rays. 

Adorned with an array of large, bright and colourful cacti, this mini desert oasis is the perfect spot for a unique Insta-moment straight out of Palm Springs. Attendees can enjoy the vibrant surrounds of the downstairs bar, while reveling in the live music and DJs on offer each day from 12pm. The full spectrum of Smirnoff Seltzer flavours – Natural Lime, Passionfruit, Mixed Berries and Mango will be available for guests to enjoy.

Iconic late night burlesque cocktail bar ‘Low 302’ to be reinvigorated under new owners

One of Sydney’s most iconic live entertainment and music hot spots, Low 302, is embarking on an exciting revamp as its new owner takes the reins.  Already a wellknown establishment due to its saucy lineup of cabaret performances and trend-setting DJ mixes, new licensee and general manager Luke Reimann is keen to put his mark on the place, reinvigorating its mojo with a delectable range of stunning new cocktails, wines, spirits and beers, a new dining menu and even more live music gigs.

“Low 302 is one of the oldest running cocktail bars and live music venues in Sydney, so it’s an absolute honour to be taking over the management of this iconic and historic establishment and making it our own while continuing its long history. It’s the best way to come into the business, because I already know it well.  But I’m here to change it up, to re-energise Low 302 to new highs!” Reimann said.

 

Old business, new business

“Many Sydneysiders were really upset when Frankie’s Pizza announced their closure due to the area being earmarked for redevelopment, with plans for a new metro train station to be built in the very same spot. Frankie’s has been around for a long, long time, well over ten years, and it’s been a go-to place for those wanting a late-night meal and drink,” Reimann said.

“We’re really sorry to see Frankie’s go, but the good news is that Low 302 is here to fill the gap that Frankie’s is leaving behind plus we are re-energising all the great offerings that Low 302 has been delivering to the market for so many years.

“So the next time you have a late night craving for a drink and something to eat with fabulous entertainment in a venue that is inviting and ‘New York’ kind of swanky, you know where to go – Low 302.”

New menu

“Low 302 is also rolling out a new evening dining menu that will include a range of all-night bar snacks as well as small plates and al e carte meals,” Reimann said.

“Whether you are popping in for a drink after work, watching a show or spending the evening with us for dinner, our new menu will include a broad range of food offerings to suit just about every taste and need. Our menu will feature plenty of traditional options as well as some curated specialties.

“Our drinks menu is where things get truly exciting. We have an extensive list of only the finest cocktails, wine, beer and spirits. Our drinks and cocktails menu covers all of the classics along with a special House List which have been specially created and prepared by some of Sydney’s finest bartenders.”

“Low 302 has always been known for our music mix and we will be stepping up our fantastic and diverse range of acts and performers,” Reimann added.

The Botany View Hotel now Sydney’s ‘go to’ for karaoke

If you needed proof that Aussies are getting back out for dinner, drinks and parties, you only have to turn up to Sydney’s iconic Botany View Hotel on King Street in Newtown on Monday nights.

According to Luke Reimann, licensee of the Botany View Hotel, the popularity of karaoke is going through the roof. While bookings for parties, work gatherings and end of year functions are coming in left right and centre, a lot of people are enquiring about karaoke.

“We do karaoke on Monday nights at the hotel, trivia on Tuesday, mixed bag of shows on Wednesday, jazz on Thursdays, barbecues and bands on Fridays and New Orleans jazz on Sundays,” Reimann said.

“Mondays are proving super special because people are obviously fed up singing in the shower and want to get out and test their singing skills at our karaoke. Monday nights are pumping.”

Reimann said that the old karaoke classics are still strong favourites with Aussies.

“Even though we have been decimated by COVID for the last few years, Aussies have come out of lockdown still fixated on some of the old favourites, David Bowie Let’s Dance, The Clash Rock the Casbah, Elvis Presley Suspicious Minds and TLC Waterfalls, just to mention a few,” Reimann said.

“In fact, if anything, retro is more popular than ever. Regardless of age, young and old are choosing to sing the old 80s classics. People like that era, it signifies good times and people are wanting boppy simple fun tunes they can sing to.”

“There is something about karaoke, it draws everyone in. You wouldn’t get up on stage and grab a microphone and sing to a large audience anywhere else, but in a comfortable and cosy pub environment amongst friends, a few drinks and a great karaoke song list, people lose their inhibitions and embrace the freedom of karaoke and they pump out a few tunes.”

“I think people are sick of singing in the shower. They want to get out and have some fun. Karaoke gives the ability to have fun in a safe environment. It is a great leveller.”

Since opening back up fully post COVID, the Botany View Hotel has been showcasing some of Australia’s best local musicians. It has become a leading location for live music, good food, the city’s biggest range of curated cocktails and craft beers, parties and events, and other fun-filled activities.

 “The great thing about karaoke is that it is not only good fun, it is also a great bonding  activity too.  Everyone gets a turn or a few turns and when you have had enough you can listen to everyone else, hit the bar or get some food. AUSTRALIA’S BIGGEST ACTS RETURN TO THEIR ROOTS TO SUPPORT LIVE MUSIC VENUES FOR: “SMIRNOFF ORIGINS”

Smirnoff Seltzer is taking Australia’s biggest musicians back to the venues that gave them their start, supported by the country’s most hotly-tipped talent. In a series of one-night-only intimate gigs hosted around the eastern seaboard, the events – Smirnoff Origins – will pay homage to the crucial role that live music plays in helping emerging talent cut their teeth, build their fanbase and become fully fledged stars.

Headlined by some of Australia’s biggest acts, the gigs will be anything but ordinary, taking over small live music venues to provide a stage set for exciting new artists that have been specially picked by the headliner to open the show.

The Presets are first to take the stage, returning to Sydney’s iconic nightclub, Club 77 on Thursday February 2, 2023. Club 77 played a vital role in the band’s early years, as the venue where they honed their skills as performers, generated fans and even made reference mixes for their debut album Beams (released in 2005), coming up in the golden age of electronic music in Sydney’s once-pulsating Kings Cross. Returning 17 years later, The Presets will host Smirnoff Origins’ first show with additional artists and venues to be announced. 

The Presets are also tasked with finding Smirnoff’s hottest opening act, hand-picking an emerging artist to open their show. The chosen artist will also receive a $5,000 performance fee, double gold tickets to Splendour in the Grass 2023 (valued at $1,200), their very own feature in Rolling Stone magazine (valued at $20,000), and Smirnoff Advertising support worth $30,000, giving them a platform to be discovered. 

The Presets Julian Hamilton says, “We’re thrilled to head back to Club 77 to play at Smirnoff Origins, a venue that was so special to us coming up in Sydney music. Live music venues like this play such an important role in supporting up-and-coming musicians and we’re on the lookout for an emerging artist to open our Smirnoff Origins show so we can pay it forward and create an opportunity for the next generation of artists.”

Lockdowns were particularly hard on Australia’s live-music industry, causing the closure of several iconic music venues in the wake of two years of restrictions. Without a stage on which to perform, many emerging artists struggled to hone their skills, find fans and make a living. Venues are only now returning to life, but they continue to need support to be able to offer opportunities to the next generation of musicians. 

Club 77 owner Dane Gorrel says, “Live music venues feed an entire ecosystem for our late-night economy, across musicians, hospitality staff, restaurants, and travel. It’s about being part of a community that contributes and creates culture. We’re thrilled to host the first Smirnoff Origins and to be able to use the event series to shine a light on the live-music scene that makes Australian music so special and creates so many opportunities for the next generation of musicians to be discovered.” 

Smirnoff Origins has been launched in celebration of Smirnoff Seltzer’s new Cocktail range – Spicy Margarita and Watermelon Margarita, both refreshing tasting drinks for summer days, and lively nights. As the brand that music lovers reach for during summer festivals and when enjoying live music with friends, Smirnoff wanted to find a way to use their platform to give back to their mates in the music sector.

We sat down with Tim McDonald the co-founder of Mexican masterpiece FONDA.

 

Where are you currently based?

Our support office for Fonda is in Richmond but I live Elwood, which is a lovely little community.

You’re the co-founder of the Mexican Restaurant chain ‘Fonda’, how did the concept for Fonda first come about?

Dave and I were just talking one day and just realised there was no one offer a fast, casual, fresh Mexican experience. You either had to go to maccas or dress up and go to full restaurant and then if you wanted Mexican you were getting very heavy, greasy stodgy food, there was nothing that was fresh and fast. So we went for a bit of a research trip to Mexico for inspiration and when we got back we just got stuck right into it.

Please tell us about how you first became involved in hospitality:

I worked in a few cafes ect when I was younger but that was the extent of my knowledge, this was our first big leap.

Please tell us about the ethos behind Fonda:

The Fonda ethos is Mi Casa Su Casa, which we feel embodies how we treat our staff, like our family, and how we treat our customers, like guests in our own home. We drive Mi Csa Su Casa in everything we do and is often the phrase that we bring out when we are making decisions about the business, if it doesn’t fit within that ethos then we don’t think it will work.

What do you think has been the key to Fonda’s success?

The people. All day everyday it’s the people. Without a great team, none of this would be possible. Our team is as dedicated as we are to Fonda.

Fonda is currently located across Melbourne and Sydney, do you have plans to expand to other states?

We are definitely looking to expand and have been doing a bit of research in the sunshine coast and Brisbane, so watch this space…

Which dishes and drinks do you recommend for a Fonda newbie?

There are a number of ways you can go here, I think it’s best to be a bit methodical about it. Kick things off with a corn, our corn has been a bit of a staple on our menu for years now so that’s a must. Then I’d probably say go to the fish taco that’s a crowd favourite. After those two snacky items I’d finish it off with a chicken or pork quesadilla. Beverage wise, it’s margs, you gotta have a marg and if you are marg beginner start with maybe our watermelon or mango house flavours and then you can progress to the traditional.

Really it’s always best to share our food, then you get a bit of everything

What do you hope that your customers’ typical night out at Fonda might look like?

We want all of our Fondas to be a place where people connect, we want to bring people together for a feel-good shared experience; great food, great drinks & a great vibe.

Who are you listening to at the moment?

 Everything and anything to be honest. I love a bit of country love a good crime podcast but most of the time I’m listening to wiggles to keep the kids happy.

What’s planned for 2023 and beyond?

Big big things, we want to continue to expand at a steady pace and of course continue to ensure our teams are our number one focus along the way.

But like any other party theme, hosting a BBQ party will also require intensive planning, especially if you’re planning a massive party for a big crowd. But worry not, as this article will give you a step-by-step guide when planning a BBQ party and ensure it starts and ends successfully.  

Here’s a simple guide along with some BBQ party-planning tips to help you organize a stress-free BBQ party that will surely impress your guests:

  • Pick The Right Day For The BBQ Party

Before you start planning the food or location, your first move is to choose the right day for the BBQ party. As much as possible, pick a day when all or at least most of your guests are free and available (e.g., weekends, holidays). If you’re celebrating a birthday and the date falls on a weekday, you may schedule the party at night when most of your guests are already done with their work shift. You also need to do a quick weather check to ensure that the day you picked won’t be rainy, windy, or stormy. 

  • Plan Your Guest List

Even if a BBQ party may seem like an informal gathering, unlike wedding receptions or cocktail parties, you still need to plan your guest list. That’s because the number of guests you invite will affect the amount of food, especially meat, you’ll need to cook and grill for the entire crowd. So, have a good estimate of how many people will be joining your BBQ party. Perhaps you’re planning to invite your family, relatives, and friends. Just remember not to invite too many people if you don’t have enough budget to buy and prepare food for all of them.  

  • Plan And Prepare Your Menu

Just because it’s a BBQ party doesn’t mean you’ll only serve barbeques for your guests. The menu preparation for your BBQ Party won’t be easier than the other party themes. Before the party, take your time planning and preparing the menu.  

Since you now have an idea of how many guests are coming, you’ll know how many kilograms of meat products you’ll need to order for the party. As much as possible, by the time they arrive, the meats are already sliced and are currently grilled so your guests can chitchat or watch you as you finish the barbeques.   

Aside from the barbeque and grilled meat, prepare all the side dishes before they arrive. You may ask a family or friend to help you chop the tomatoes and lettuce and form burger patties so that everything is almost or completely ready when your guests arrive. 

  • Adjust Your Menu To Cater To Your Guests’ Preferences

When preparing your party’s menu, you must always take note of your guests’ personal food preferences. Remember that even if it’s a BBQ party, your vegetarian friends will still surely come over to join in on the fun. So, instead of making them feel left out, be ready to expand your menu and provide dishes suitable for vegetarians. If most of your guests are red-beef lovers, consider forgoing the chicken to make more room and budget for beef. Meanwhile, if most of your guests are bringing their kids, you must prepare some finger food suitable for kids.  

  • Ensure You Have Enough Charcoal Or Propane

The last thing any party host would want is to leave in the middle of the party to run errands and additional supplies of charcoal or propane. Not only is it stressful and time-consuming, but it’s also a hassle and can completely ruin the mood of the party. Plus, once you return from buying charcoal, your raw meat will look rubbery from waiting too long to be cooked. To avoid such a situation, check if you have enough charcoal or propane to last the entire party duration. 

  • Do Not Forget To Prepare And Stock Enough Drinks

As part of your party preparation, stock your cooler with drinks suitable for all your guests, both kids and adults. Preferably, you can set up two separate drinking stations intended for kids and adults. For example, the kid-friendly drink station must be filled with juice boxes, bottled waters, ice, fruit shakes, and other kid-appropriate drinks. Meanwhile, the adult drink station may be filled with wine, beer, soda, and other adult beverages.

AFL legend and renowned carnivore Brendan Fevola launches Mad Mex’s new plant-based range

Aussies offered a free taco to see if they can pick the difference in the meat versus plant taste test

 Mad Mex, Australia’s leading fast, casual Mexican restaurant, is pitting beef against plant power by challenging Australians to see if they can taste the difference between its meat and plant-based mince.

Mad Mex has partnered with a renowned carnivore and former AFL player Brendon Fevola “Fev” to trial these new tasty ‘flexitarian’ options and launch its new Powered by Plants menu items.

The new menu items have been driven by customer demand, with more than 12 per cent of customers opting for plant-based food each year. Testament to its deliciousness, in the past 12 months alone, Mad Mex has dished up a whopping 25 tonnes of tofu and 15 tonnes of vegan

chicken.

Interestingly, demand for plant-based food is being driven by both ‘flexitarians’ – people with a flexible diet between eating healthy and incorporating meat from time to time – and those with a plant-based lifestyle. They both have one compelling demand: the big bold flavours of Mexico.

We were working to create alternatives in our menu that support Mad Mex in becoming a more sustainable restaurant option, and try to reduce our footprint on the planet.

“We have been watching this trend closely and were the first Mexican quick service restaurant (QSR) to launch a vegan product. We have had a Powered by Plants range since 2019. There’s a reason our plant-based foods have been such a hit – they’re delicious. We believe fast food should be better and all Australians can enjoy our authentic Mexican cuisine, irrespective of whether they eat meat.

“For us it’s all about choice. We’re excited to announce our new mince and vegetable options. We believe our customers will love our new range and take the opportunity to eat a little less meat in their diet – we challenge them to try it.”

The Mexicali Mince is made from soy and has a delicious blend of tomato, cumin, onion, paprika, chillies and garlic to deliver an unbeatable tasty and saucy filling. It’s high in protein, is created with natural ingredients and contains no artificial colours or preservatives.

To celebrate the new range, Mad Mex is offering customers a free Mexicali Mince Taco when they purchase any main meal from the 15th -21st August, nationwide. All people need to do is say “Mission Mexicali” at outlets to receive the complimentary taco and taste the Powered by Plants range. [1]

Mad Mex has opened 12 new restaurants in the year across Australia, and the company is looking to grow its store count by 20% annually in the coming years.

World Class Cocktail Festival Unveils Impressive Lineup

World Class Cocktail Festival will simultaneously host over 50 of the world’s best bartenders including Nick Tesar from Melbourne’s Bar Liberty, as they battle it out for the crown of World Class Global Bartender of the Year 2022

Roll out the red carpet, Sydney is set to step into the global spotlight as it hosts the return of the World Class Cocktail Festival, from Friday 9 to Sunday 18 September.

An extraordinary celebration of vibrant food, drink, and cocktail culture, the festival will welcome award-winning bartenders, foodies and cocktail lovers from more than 50 countries. The festival will be Australia’s opportunity to showcase the very best of its incredible homegrown hospitality scene, and the skills, creativity, charisma and talent behind its unique cocktail culture.

Across nine sensational days and nights, leading Australian food and drink venues such as Quay, Bennelong and Shell House will join forces with the world’s greatest names in the global bar scene and cutting-edge culinary creatives to deliver unrivalled cocktail experiences, one-of-a-kind events, unexpected food and drink pop-ups, inspiring collaborations and seriously cool parties.

Hailing from the world’s number one bar, The Connaught‘s ‘Master of the Martini’ Ago Perrone will be jetting in from London to create magic with Tanqueray No. TEN at Bennelong, for a one-night-only collaboration that will see the world’s best bar meet the world’s best view to deliver the world’s best martini. Guests will indulge in an iconic menu prepared by the legendary Executive Chef Peter Gilmore, paired with spectacular cocktails by Perrone, a true master of his craft.

On the other side of Sydney Harbour, a sparkling whisky lounge brought to you by celebrated London bar Lyaness, hosted by none other than the world’s most awarded bartender, Ryan Chetiyawardana aka Mr Lyan, will come to life. For a few days only, Mr Lyan will transform the Green Room of fine dining restaurant Quay into a vibrant bar and supper club, serving the icon of modern luxury: premium Johnnie Walker Blue Label cocktails alongside delicious and iconic bites by Gilmore.

Queen of Cocktails, and recently-named most influential bar star in the world, Norwegian bartender Monica Berg will grace our presence to transform Shell House‘s stunning Clocktower Bar into a pop-up bar showcasing the skills she has honed at her very own Tayēr + Elementary, voted number two bar in the world.

A colourful feast for the senses, the Don Julio Food Truck Fiesta will assemble Australia’s most popular food trucks for a pop-up experience like no other at Hickson Road Reserve. A vibrant celebration of the enduringly-popular, always-tasty, never-out-of-style margarita, the vibrant fiesta will feature the World’s #23 Best Bar – Sydney’s Cantina OK! – who will serve up delicious margaritas alongside an all-star line-up of food trucks including Australia’s OG ’09 Beatbox Kitchen (Melbourne), Ricos Tacos (Sydney) and Taco Truck Dos (Melbourne), completed with a soundtrack by Sydney’s finest DJs.

In a world first, local hospitality king and waste-free crusader Matt Whiley (Re, South Eveleigh) is on a mission to transform sustainability in hospitality by leading a week-long circular economy of participating festival bars with The Barbershop, PS40, Old Mate’s Place and The Lobo using each other’s unwanted food & bar waste to create tasty, one-off cocktail additions. Whiley’s initiative kicks off Ketel One’s bartender-led program, ‘Garnished with Good’, inspiring and enabling the hospitality community to create positive impact in their local community.

Festivities will flow into nearby hotspots including Surry Hills, Newtown and the CBD, where, among many others, the likes of Earl’s Juke Joint, Maybe Sammy, Double Deuce, The Rover, Frankie’s, Hickson House, Dean & Nancy’s, will offer a curation of unexpected experiences, as well as interstate favorites including Black Pearl, Melbourne, popping up to share their magic. Celebrating not only the best cult food and beverage trends, the World Class Cocktail Festival will also host the global final of Diageo’s World Class Bartender of the Year with Nick Tesar from Bar Liberty in Melbourne representing Australia. Joining over 50 other global finalists in Sydney, Tesar will battle it out for the title of Diageo World Class Global Bartender of the Year, announced on the evening of Thursday, 15 September. Notably, Australia has always batted well above its weight in the competition, with Tim Philips-Johansson and Orlando Marzo both taking home the global title since the competition started, both of whom will be joining the extravaganza to judge at this year’s event.

THE HOME OF MEXICAN MAGIC ON AUSTRALIAN SOIL

Sparked by a desire to plate up mouth-watering Mexican like no other, leading culinary institution,  Fonda, was born from humble beginnings. 

Over a decade ago, Tim McDonald and Dave Youl were on a mission to satisfy their cravings for  fresh, flavour-packed Mexican food in a venue that felt like home.
